Is meteor a worthy option anymore? Wouldn't you be better off by using a Mongo/Express/React/Nodejs stack?

Yes, for the same reason that Django has more of a future than Flask in the python community. Independent developers simply do not have the time nor mental energy to waste setting up a framework. By and large, independent developers build websites, and NOT frameworks. Express is useless to most developers.
